AWG Water pH and Taste: Why It Drinks Like Spring Water
Short answer: condensation gives you water that is almost completely free of dissolved minerals — clean but flat-tasting. A mineral balancing cartridge then puts calcium and magnesium back, which is what lifts pH and gives the water its crisp, spring-like character. Measured results for the Aquaura A40 came in at 35 ppm TDS and pH 7.6, inside the 7.5-8.5 band ZENIUS specifies for the mineral balancing cartridge and comfortably within the WHO and EPA limits of 6.5-8.5.

Why pure water tastes flat
Water condensed straight out of air has never touched rock, soil or pipework, so it arrives with almost nothing dissolved in it. That is excellent news for contaminants and mediocre news for flavour: what we perceive as the taste of good water is largely its mineral content. Fully demineralised water tastes “thin” or “empty” for exactly the same reason reverse-osmosis water does before it is remineralised.
The fix is Stage 3 of the ZENIUS four-stage process. A mineral balancing cartridge adds calcium and magnesium in measured doses, which does two things at once — it stabilises pH and it puts the taste back.

One caveat worth stating plainly. Target ranges differ slightly by model and by cartridge specification, because the dose is set to each unit’s flow path. The number to rely on for your machine is the one on its own test report — ask for the certificate number and verify it with the issuing laboratory. Independent testing has been carried out at SGS Hong Kong, TÜV Rheinland and NSF International.
What it tastes like in the glass
ZENIUS output is consistently described as crisp and lightly mineral, closer to premium spring water than to anything from a tap. Three practical consequences follow:
- Tea and coffee extract differently. Very soft water extracts more readily, so slightly reduce brew time or dose on the first few pots.
- It behaves like soft water in appliances. Low hardness means less scale in kettles and coffee machines — a genuine maintenance saving over hard mains water.
- No chlorine taste, ever. Chlorine residuals and disinfection by-products are a distribution-system problem, and there is no distribution system here.
Keeping it tasting that way
Taste drift is almost always a filter problem rather a machine problem. A spent carbon block lets odour compounds through, and an exhausted mineral cartridge stops holding pH where it should be. Replace filters on schedule and the output stays identical year after year; let them run past their interval and the first symptom is nearly always “it tastes different”.
Bottom line: atmospheric water is soft, lightly alkaline and mineral-balanced by design, testing 14 to 28 times inside the WHO limit for dissolved solids. If it ever tastes flat, the answer is usually a cartridge, not the machine.
