AWG for Restaurants and Cafés: Water for Kitchens and Counters
Short answer: because water is the one ingredient you cannot substitute, and its mineral content runs straight through to what customers taste. A properly mineral-balanced AWG gives you consistent input water for coffee, ice, dough and tea — while removing bottle deliveries, cooler rentals and the storage space they occupy.

Three problems it solves at once
- Taste consistency. Mains water changes with the season and the treatment works. Condensed water does not: it starts near-zero in dissolved solids, and a mineral balancing cartridge sets it deliberately, giving baristas and chefs a stable input instead of a moving target. - Delivered cost. Bottled water is priced by the bottle. Atmospheric water is priced by the kilowatt-hour, at roughly 0.3 to 0.5 kWh per litre — see what that means in money. At scale — a resort using 6,000+ litres a week — the logistics line disappears along with the plastic.
- Space and handling. No crates in the corridor, no cooler sanitiser schedule, no one lifting 19 kg bottles off a truck.

Sizing and siting
- Small café: start from the few hundred litres a week you actually serve, then match to a household-office class unit.
- Full-service restaurant: front-of-house still water plus kitchen prep plus ice machine — size against peak service, not average.
- Site it away from the kitchen hood. Cooking aerosol is grease and particulate; the dedicated activated carbon pre-filter handles ordinary ambient air, not extract directly above a range.
- Factor in noise. Household units run 35 to 55 dB — fine for a kitchen or back corridor, less so for a quiet dining room. Full guidance in AWG noise levels.
The pattern used by hotels is instructive: roughly 5 litres per room per day replaces in-room bottles, while food and beverage plus back-of-house typically adds about 200 L/day for a mid-size property — see the AWG sizing guide for the method.
Bottom line: treat water as an ingredient with a specification rather than a utility bill. Once you do, generating it on site is usually cheaper than buying it, and consistently better than whatever arrives in the pipe.
